Mojito


We enjoyed many a mojito on our trip to Havana, and the best ones had two things in common: Havana Club 3 year, and lots and lots of mint! If you haven’t got access to Havana Club, any good quality white rum will do.
 

          2 ounces white rum
          generous handful of fresh mint stalks
          1/2 lime, quartered (or 1/2 ounce good quality lime juice)
          1 tsp simple syrup
          4 ounces soda water
          several dashes angostura bitters

Place lime, simple syrup, and mint in a tall glass, and muddle thoroughly. Add soda water and rum, and stir. Fill glass with cracked ice. Add bitters, give a final brief stir, and garnish with one more mint stalk.
